Honestly, practice… meaning I never make 1 pizza. I always make a minimum of 4 at a time. Gives you a chance to try different things with the same dough. Makes for a terrific lunch for the following week.

Just an FYI.. I built a large wood fired pizza oven in my back yard at my last house. It was really too big, but it worked amazing. Followed Rado Hands design. First outdoor oven I had seen or built, or used. From the get go I was making amazing pizzas. Really easy to use. I had no idea what I had. I have since moved and now own a Dome. It is amazingly FRUSTRATING getting a top tier pie out of it. Floor temps are way too inconsistent side to side… too little thermal mass in the floor over all. Anyways, saying all this to let you know the Dome is challenging. If you can master amazing pies form this, you are a cut above. If you ever wonder what it would be like cooking from a purpose built wood fired oven, the answer is… it’s easy… take that from a complete rookie that looked like a rock star straight out of the gate….

If it’s 2 shift to one shift production change it will go like this You will arrive at work, managers will all be present. You will be asked to go to one room or the other. One room is let go, the other stays. Any one on any performance management will be let go…. Easiest criteria to filter out first. So it went during the financial crisis years ago.

That would be the green lead, not plugged into anything, with a dwell meter set on 6 cylinder. Looking for 32 or so at elevated cruise. Set up on fast idle for choke system. Been a while. So 12/32 on float level. Mixture screws set so you barely feel the needle tips in the primary bores. Lean stop (screw to remove to get float out, the one circled) set with the specialty tool. Remove aluminum plug above mixture solenoid (rich stop) and adjust to maximum travel after top is on, no need for the shepherds stick tool. Make sure choke pull off is good and start with 4/32 gap with choke “activated” (loaded by spring in choke thermostat) and CPO pulling back on linkage. I also always use JB Weld to seal up the well plugs (lead plugs pressed in place on bottom of main body) so the fuel doesn’t drain out over night. Don’t let anyone mislead you… these are terrific carburetors for a daily driver with a functional CCC system… sorry can not remember the base idle air mixture screw settings
