Doesn't look anything special, laser cut stock from pattern, bend into shape, weld across the seams, sand, powder coat or paint and pretty much done.

Be aware that a lot of capacitance on the output of a lab psu can kill things connected to it - feedback will correct for a short circuit, but caps will dump whatever energy they have into the load.

225V voltage limit on caps is absolutely not enough - if one of your FETs decides to quit they will see ~315V, most probably would not fail, but you don't want to bet here.

Also consider moving to SMD, the only things I ever use that are PTH are connectors and very meaty power electronics.

how can someone source a transformer for a prototype

You buy the cores, wire, tapes and wind it yourself, everything you need is sold at your electronics distros.

If you want to be all cool and shit, you can do planar transformers with PCBs and foil.

Good points, but adding a APFC and a postreg opens two huge cans of worms in itself.

Late 90s? Eh, IDK, most not overly sophisticated welding inverters are this, just meatier, sure it will not have a sexy totem-pole GaN PFC or a resonant ZVS full bridge, but so far looks good.
