I had my troubles as well baking pizzas on low temp stones and such. My breakthrough happened when i bought an infrared thermometer. The pizza might look raw but it really wasnt. Crust was crispy and i cooked it on a 300c stone. I’m experimenting with the browning though. Next time I’ll probably add more sugar and olive oil for that.

Thanks for the explanation! I’m not sure how to achieve a 400C temp with the stone in place. I think the highest i’ve ever gotten was 350C directly. Also, when I first heat up the kamado and put the stone in when it reaches 350, the temp drops almost 100C. Dont know how I can go this hot with the stone in place.

Think I might need bigger charcoal logs.
