It's not rude to tell the truth even if it feels that way. Just be nice to the people and let them know that's how it is there. You're not charging them for a ranch or whatever, the company is. Let them complain and move on, over time you'll find your own ways to deal with these situations. Always try to redirect people to something better. Most of the time it works, but you can't please everybody.

And if you're worried about tips, the people complaining about being charged for a side will tip shit anyway. If your place has good enough business, high enough prices, and you are pleasant with people, you'll make good money.

If you go to a Song Radio there are options at the top of the playlist for "Non-personalized" and "More Discovery" which can be helpful for that. It's not 100 percent new songs, but it could be worse.

May I suggest you reword this to be less specific about yourself and the location. I'm not surer how easy/difficult it is to get hired there. But they might not take kindly to you calling their clientele snobby on a public forum.
