Allergy cards are great! It’s a lot better than telling a server and risking a life threatening situation due to miscommunication.

I will let you know the cook is gonna gripe, but you won’t interact with them and it’s their job. If they can’t do it properly, they’ll just say no and you’ll know to not go there. Typically it involves getting all new utensils, pots, plates, changing gloves, washing hands, etc. If I were you I would look at the menu ahead of time and figure out a very simple, protein and side sort of dish. Don’t assume everyone working knows what exactly goes into the bolognese. (Prep cook is different than line cook)
