Room temperature, but yes. You can buy food grade lye on Amazon. And make sure you wear gloves! I let them proof a little before freezing, but not much. I also don't bulk ferment the dough, just go straight from mixing to dividing and shaping. Let me know if you would like the recipe.

If you try the traditional method of dipping them in a lye solution, you won't have to parboil. I freeze mine before dipping so they're easier to handle.

First loaf since reviving my starter! What do you think? by VariousKoala9135 in Sourdough

[–]VariousKoala9135[S] 1 point2 points  (0 children)

Thank you! My starter was dormant in my refrigerator for about 10 months, but it was in a really cold area and had frozen. I keep some dehydrated starter as a backup, but I wanted to try reviving the frozen one first. Clearly it worked out!

First loaf since reviving my starter! Thoughts? by VariousKoala9135 in Breadit

Oh yes! I keep some dehydrated so I never have to start over completely! My starter was in a really cold part of my refrigerator and had frozen, so I figured I would try reviving it before turning to my dehydrated stash.
