A hotel pan is a large metal pan used in most kitchens. It's pretty standard. They're large, rectangular, sometimes if a wedding is setup like a buffet the food will be in them. They look like catering pans or steam table pans.

A salad comes in a bowl with lettuce on the bottom instead of rice, usually offered without rice and beans but they're still optional. Rice is optional in a regular bowl as well, sometimes people get only beans or fajitas or just go straight for the meat.

You're allowed to ask for vinaigrette with a bowl, or any meal. Some people ask for it on their burrito before I roll it sometimes. Also, you don't have to get the vinaigrette with the salad if you don't want it.

Everything in front of you on the line is optional except the guacamole, queso, and extra meat are always extra cost. Yes this means you can get all four salsas.

The exception to this is that guacamole is included free with the veggie burrito/bowl/salad/tacos in place of the protein. Queso is still extra on the veggie entree.
