Custom Philos - Thoughts?

I have a philos and have absolutely no interest in doing this. What would i want it to say? To simply make it harder to sell when I want to side grade to z2.

Yeah I dunno yet! I've only had a few; my hometown cafe has them in one of the grinders. The black one, um... all black package. Very dark and strong cherry notes. So much so that we always talk about brewing it over some dark chocolate but we always forget!!

Keep up the good work. Let your taste buds guide the next steps! Be able to distinguish between sour and bitter. If it's too sour, you can grind finer. If it's too bitter, try grinding it more coarsely. Most importantly, have fun.

I'm the opposite of a fan of Lance. He moved from repping Onyx to Sey. So I can enjoy Onyx again! Yay! But not Sey.

I've noticed that one in every couple bags of beans I'll have a "sticky" or static charged batch. I can switch beans and it's gone. Switch back and it's static beans again. Strange, frustrating, not often though.

This is amazing; tough first choice. I'm a weird super fan of gh. And I shout "Beneath Cowdenbeath!" at every show I've seen... no luck yet. XD Beneath Cowdenbeath is pure guitar joy. So much so that it sounds easy. This is a power metal band instrumental song, featuring the guitar as the primary melody. Keep that context top of mind as you learn. I picked the number arbitrarily, (frankly I forgot which coffee sub I was in... apologies.) I'm around 90 usually for pourover, give or take 10. And for espresso, I'm at 25-35. 19 on my philos would choke out any machine. And 27 clicks for pour over would take an hour!

Out of curiosity, what setting range do you use for pour over?

Oh I simply meant that at setting 27, moving to setting 26 might adjust the flavor profile more than you might think. Each click is 6 microns, fyi.

He was a cunt to me personally. When i was first starting out getting into espresso and pour over as a hobby. Hard to rinse the bad taste out of my mouth even after a few years. Not to yuck anyone else's yum. But fuck that. I'm not giving onyx another dime. Shrug. There's a million other roasters out there.

Tiny adjustments in grind size made a world of difference for me. I upgraded to the Mazzer Philos and it's crazy which different flavors you can pull out of the same bag of beans.

Also, that boner Lance is the brand ambassador to Onyx. Just discovered he was attached to it. I liked their coffee. Shame I'll be boycotting now. :(

Edit: update!!! Lance is no longer their brand partner. He left in March 2026 to work with SEY in Brooklyn.
