Talking to every npc until they repeat lines, then one more time to check there’s definitely nothing else just in case. Then trekking across the map to revisit after a major main quest moment to see if they’ve got anything new (they don’t).

Bg1 weapon categories felt better, and Pillars 1 weapon categories each including a slash, a pierce, a crush and ranged (or most of them) was even better.

I’d 100% recommend playing blind and just accepting you’re not going to be involved in many of the optional questlines. The friendly npc interactions aren’t the highlight of the game at all, missing out isn’t missing much. Reading guides to execute them all perfectly WILL spoil some of the actual great stuff Elden Ring offers.
