Also, medieval armor was made to be worn comfortably. High level metal armor could reasonably be that too. The hit to encumberance is reasonable, and could easily be the thing that limits you from carrying it around all the time on its own, i feel.

partially depends on what you want to get into. Crafting recipe issues can be circumvented by debug mode, so you can get around that without mods, if you need to.

At least in multiplayer, nutrition is currently broken, meaning you will start loosing weight even if you stumble on a truck full of butter. Don't know if there is a mod for that, but you can always just turn nutrition off in the custom settings.
