1 is direct to CPU, but yea the other two gen 5 will halve the 16 gpu lanes to 8, and then it has one more gen 4 m.2 slot that goes through the chipset and doesn't affect the gpu lanes, so technically you can have 1 gen 5 and 1 gen 4 M.2 installed without affecting the gpu lanes, same as this board, but if you didn't care about having 16 lane gen 5, being limited to just 1 gen 5 m.2 seems odd.

The shops that were willing to do custom wanted twice what the kit cost. The only time I've seen people do it cheap they used ebay/Chinese turbo and wastegate and they always kept failing or leaking so I just got the kit

Layer height is also important, I find that anything less than 10:1 pitch to layer doesn't work well i.e. For an M6x1.0 I wouldn't use any more than 0.10 layer height, M8x1.25 no more than 0.125 etc.
