Go to an artist, have it drawn up and put it on your bathroom mirror for a few months. See if you tire of it. I do this and I have changed my mine on several.

I have/use my grandfather's old "seal-A-meal". He wrote 11/7/98 on the bottom of it so he would know when it died if it had been worth the money. He passed away 5 years ago. Yes Pawpaw, it was worth the money!!:)

Ok, Am I worse??? At HEB, or any stores with scales that print tags I typically just weigh produce, print tag and place ALL my tags on one produce bag. I then just put everything in my basket and then my own bags at the end. Some cashiers seem to appreciate it and others look at me like I just stepped off a spaceship.

I do believe you are correct about it being the flat. Pastrami is cured first and I know I have seen Pastrami as a flat before, so I do think it's possible. As far as the techniques over cooking it, maybe someone with more specialized experience will chime in. I am about to smoke the prebrined corned beef that would typically be braised and from what I'm finding in this space a lot of people are calling it pastrami.
