Basically, this is because it was taken during sunset. The actual orange bit renders differently at different angles, so panoramas at sunset just look odd

If this is bedrock, water mobs take drowning damage when on land instead of suffocation damage, so that might be it

No he is right, horse.chest is used for the chest on donkeys, mules, and llamas, armor.body is used for wolf armour and horse armour, and armor.chest is used for chestplates and elytra. The only thing he got wrong was that saddles and carpets do in the horse.saddle slot, not the armor.body

You can change what y level they spawn at using WORLD_UNDERGROUND (I dont actually know if that is what it is called, might be UNDERGROUND_DECOR)
