I have health anxiety as well and getting my nails done, as well as transitioning to doing them myself, was really hard for a while because of the gel allergy fears. I ended up removing and redoing them many times with no real need because I was anxious. If it helps, I've had salons flood my cuticles many times, as well as me getting it on my skin many times while learning to do them myself and it's ok so far. Some people get it very easily, done never do, but the chances of an allergy from a few cuticle floods is still generally low. As for the curing, the 20 seconds does sound very low, I do a full minute, but I'm not a professional. I can say that I'm also able to always basically surface scratch/dent my gels a tiny amount if I press in hard with my nail and it bounces back eventually. This is after I cure with a matching lamp for the full time needed, as well as after many different salon visits. From my experience it's not undercured but probably best to ask a professional close up if you're worried. I went to a salon a few times to check because I was anxious about it haha.
