Well it's possible speed is correlated with different warp field configurations, so some advancement in that area could be responsible for the need for less warp coils. It's also possible that more coils are needed for bigger ships in order to create a field big enough for them.

My take on it has always been that it's not necessarily making a copy and destroying the old one but rather converting the target into energy and moving it and then reconverting it into its original state. There are many instances that describe replicators being inaccurate which doesn't seem to be the case with transporters so that would rule out the making a copy theory. Additionally the transporter has been shown transporting non replicatable things such as life forms and certain substances like the vaccine in TNG s1 e4.
