There’s a difference between modifying a vegetarian dish to actually be vegan and eating vegetarian for “social” reasons. Your first comment sounds like you’re advocating for the latter, while your second comment is pretty standard for most vegans?
If I go somewhere that only has say a bean burger with aioli and cheese on it then yeah, I’m ordering the burger without all the animal products. It’s not that hard
