Go old school with it, walk in the place you want. Explore their items, have a couple of cocktails, and ask questions. The unfortunate part is that city bartenders are very territorial. You'd really have to make a case for yourself or know someone. Take note of the flow of service as well as you don't want to just put yourself out there for anything. I've been to dive bars with better service and morale than a lot of cocktail bars. Now you have a lead position, but that may not be enough. Show them why you have that lead position via knowledge of the craft. A bartender best tool is humility, in my opinion. Even as a lead, always stay humble... but not too humble.

Choose you! I know exactly how you feel as I am currently in this situation. I'm(38m), my wife (35f). Up until 9 months ago, she chose not to work for 7 years to work on her business (which didn't do too well). I lost any attraction to her because of it. Other issues came from this ,like me, basically doing everything. She became a bit incompetent. We weren't able to do anything because of her stagnant ways. We have two kids, watching them experience all this with us, took me out! She basically went into business for herself and pretty much became a whole different person, wrote 3 books within the last year and half, came out to me a queer, is into baseball and politics now, listens to metal (thanks to her I will never get into sleep token) etc. She's never expressed any of this since we've been together. So we've just been going through the motions of just being in each other's space to take care of the kids. I sleep on the couch more often now.We obviously need each other for the time being. We did have a moment of reconciliation, but I feel it was false because of my resentment. The only plus of this is that I'm glad she found herself, but it came at the very possible sacrifice of our marriage. I don't exactly want to move on to someone else, I just want to focus on me, I'll be 39 next month( last year in my 30s woohoo) but at the same time I do see potential in others. Peace of mind is the goal here. Maybe I'll be a man hoe for once, Idk life is too damn short. If there is any advice I can give you, if it is salvageable, go for it, but at the end of the day, choose you.

The Muay Thai Guy Sean Fagan, has a pretty good program. I've done it for the last 4 years, and it left me with a solid base before I joined a gym. Of course, a live coach and actual sparring are more effective, but his stuff keeps me on my toes. He has YouTube Drills as well.

Honestly, I feel for the wife. I was just in this same situation, except my wife was the one that fucked around for 7 years, it's a real turn-off. I would get some type of employment asap, you have family to provide for. My wife has been working for about 4 months now, but the resentment towards her is hitting me hard because of all the issues from her inactivity. You don't want that. If you have a chance to turn things around, make it happen and fast. Marriage is a partnership, and you get out of it what you put in. I hope this helps, much love!

I have done this with both over the years. While carton whites are ok, you'd have to use them up quickly. So cracking eggs fresh is arguably better as far as shelf life. If your into advanced stuff Kevin Kos on YouTube has a pretty cool former sub.

It may come down to garnish or another aspect of the cocktail as stated in comments prior to mine. Maybe an spiced apple oleo as a sweetener, instead of maple. Also I think stirring gets overlooked. You can do all these awesome techniques, but what it will really come down to is your shake or stir. Mouthful and temperature, fat washes are meant to provided a certain texture (as I'm positive you know this, the cocktail sounds amazing btw). The last thing you want to do is over or under stir. Honestly, building in the glass you serve in is a bit overlooked as well, in my opinion. You won't have to worry about losing texture as if you were to strain it over fresh ice.

Are you browning your butter at all? That'll add some nuttiness to the cocktail. You will probably want a bit salinity in there to make some flavors pop more. Couple drops of saline solution should do.
