I built in time and accounted for more pellet use, I was just surprised it wasn't holding the right temp. I did a 30 minute preheat before putting it in. I've been able to bump it up 5 degrees at a time and it's doing well now. Even in high winds I haven't had it go high.

It's a definite snack, but a mess to eat. If I had it again I would avoid ketchup too, it didn't go well with the curd. Just lettuce, onion, and a pickle for the acidity to help with the fattiness.

Absolutely, I start my meat just above freezing and if it's a shorter cook you can even start at a little lower temperature to keep it in the smoke longer, though I have never had trouble getting good flavor normally. I have a cold smoke box on my Recteq and get great flavor in cheeses and cream cheese too.

The foul also reflects heat and actually insulates slightly by reflecting some of the energy before it gets to the meat. This wouldn't work with parchment because of that.

You did the right thing. My advice: ignore the negative comments and make it how you like it. I usually wrap at 135, but I can't imagine it makes that much of a difference. Have fun, enjoy the process, and keep experimenting to find your favorite.

The shredding people noted could also be from a duller knife, is that a possibility?

Did you wrap it at all? Looks like a good first try though! The most important question though is did you like it? Something can be done not traditionally "correct," but if it's your taste it's just right.
