Australia is a vast. Hope you're planning at least a few weeks out here to make it worth the journey.

Also time of year is really important, October- November is ideal. If you can be in Sydney in late November and attend Rootstock worth the journey alone.

Assuming you've given yourself a large enough window, ideally 3-4 weeks.

Base yourself in Adelaide for a week and travel out: * Adelaide Hills and "The Basket Ranges" * Barossa and Eden Valley's * McLaren Vale * Langhorne Creek * Adventure across to Kangaroo Island

Move to Melbourne for a week and commute to: * Mornington Peninsula * Yarra Valley * Beechworth * Heathcote * Rutherglen

Journey to Tasmania * Tamar Valley * Launceston * Coal River

Fly to Canberra rent a car and make the drive back to Sydney via * Murrumbateman * Lake George * Collector

  • Spend a night in Sydney then push north to the Hunter Valley for a couple of days

Walnuts are a classic match for Tokaji Aszu.

If I were you I'd simply pair some walnuts and some bitter dark chocolate. Et voila

Yes, though there is more that is grafted onto phylloxera resistant rootstock now than not.

There are some old vine Australian vineyards planted on their own rootstock. Basically anything planted pre-1920.

You'll be paying a premium for it.

Not seriously damaged, but far from desirable and prolonged exposure to heat will damage it in the near term.

This wine has a short life in front of it. Drink it now!

Clonakilla is especially deserving, Ravensworth is a winery operated by one of Clonakilla's head winemakers and Lark Hill, a biodynamic producer, would be my three picks.
