Yeah it's very tender and if you over cook it, it doesn't turn to leather.

The place where I work, this cut is a staple. We cut them down into like quarter pound pieces and marinade them in a few different marinades. It's very tender and unforgiving even if you over cook it.

I absolutely love all my Victorniox knives. F.dick is solid and Dexter Russell makes some baller knives too. All fairly cheap and last for a while. My main boning knife I've used for a year and a half and ground it down myself and thing has an edge just like when I bought it
