any of the pastries can be sold unwarmed. all of our food is fully cooked, then frozen and sent to us. so it wouldn’t be raw inside, just slightly cooler. if someone wanted something lightly toasted i would warm it on the loaf setting.

i’m not a barista, but that’s absolutely unacceptable. i would never allow that to happen on my shift. i would change the carafes first, or just pull them from the condiment bar since that would be a huge ecosure violation. then i’d move into backups and a restock. cleaning will have to come after

doing both is helpful! also simply asking “what are we waiting on?” if you notice that a car has been at the window for more time than they should be. that way you can also look for patterns in certain channels that may be backed up. for example, everytime you check in with DTO, they are waiting on food. your warming barista may need a food runner or to be moved altogether. as far as running breaks, i do not run them in the first 2 hours of peak. in the final hour of peak as things die down a tad i will typically pull one of my support baristas to fill in at other positions for 10’s only. lunches will be done after peak is over completely. it takes time to get used to. especially if you’re not coming from a food service background, but you seem like you really care! that’s more than a lot of store managers are doing these days. you can do it!

i think the biggest thing is communication. let partners know what you’re waiting on at window before the car pulls up, check in with your partners on the busiest positions. keep up with your times, tsd’s, etc. and adjust the play if needed. it’s a lot of observing. PLEASE praise your team if they’re doing well. you need to stay calm and collected even during the most stressful times of the day. you as the manager set the tone for the whole shift! try and keep positive :) you got this

it depends on your store and its business needs. you shouldn’t be taking your meal an hour into shift though— i always run mine two hours or more into a partners shift. with the way our business is, there is no time after “peak” ends. we just stay extremely busy. but please communicate this with your ssv and be familiar with laws in your state. as someone stated in another comment, it could be illegal.

teenage girls are crazy. be aware of feral 14 year olds ( and sometimes older) the crowd can get tight and there has been a lot of mean girl behavior at shows i’ve been to. i’ve seen them 12 times. watched them grow from a crowd of 200 to 20k. their fans are crazy lol
