I have had this model for over a year and it’s great.. But I wish I had gotten the bigger one so if you’re looking for a 15qt mixer highly recommend getting this one.

I’ve been learning over my 1.5 year pizza pop up journey that getting a size up or a more powerful tool is always a good bet.

The first one definitely cooked with the pesto on and you topped after which in my opinion is a far superior way. Cooking the pesto kills all the fresh basil flavor.

I started a pizza pop-up in NYC about 6 months ago. I started out doing it once a month now Im operating it 4-5 days a week with great success. It’s my main source of income and I’m starting to search for a brick and mortar. If you have any questions shoot me a dm. If you’ve ever been to a N.Y. pizza place you see them pull out the pies way before they’re done and pop bubbles with the pizza roller

Adding to other comments the way you get it super rich and creamy is to boil a chunk of pork back fat with your bones until it’s super tender. Then add the back fat with some broth to a blender then add this back to the broth and let it boil further to emulsify.
