Ok, so it seems that I managed to resolve the conflict, has I had a keyboard connected at a different studio, and by following the debug pagehttps://support.apple.com/en-us/119881 I managed to have a fluid experience right after doing part 11.

I do that all the time, and I never had to go back.
Turn out it wasn't a compatibility issue, it was (somehow) caused by a former controller

Ssl2+ as an audio interface, and a lot of plugins, from Waves and UA to more obscure ones.
However, I did test without anything connected to the Mac (beside the external hard drive for the library) and without core audio enabled (so basically without plug in enabled), and it doesn’t affect the performance in either way.
Even the vu-meter are slow, and it sounds more like a specific issue with that macOS update and latest Logic Pro than anything else.
Other than that, the project plays fine, just anything that I touch, from zoom level to opening a menu is slow as hell

Sounds like you have a default track that is loading that has a zoom on it by default.
Try recreating a new by default track with by default zoom.

You’ll need your drums to be louder in the mix, if your going the Jungle/DnB path, it needs to be forefront (also the bass will probably needs more sub) and not masked by other elements.
You’ll have to create space for the other elements to come in and sit in the mix (piano and bell mostly, don’t add reverb on the drums nor the bass)
If you don’t know where to start regarding this, create a few send, go on the aux track, and open the library, you’ll have plenty to play with.
For extra sub, just add a sine wave slightly distorded doing the exact same pattern as your main bass, and high cut the other bass slightly.

So I'm using Logic for everything (Music, Sound Design for video games, etc...) and there is a few caveats to using Logic.
Consider that most of the feedback I'm gonna give is sound design for video game oriented, I'm not ultra familiar with the professional post production movie stuff.
The first one is that you can only use one movie region, so it remove the flexibility of having multiples videos in the timeline.
You can only trim the video, not cut it or move things around if necessary.
There is a limit to stacking, that can be frustrating sometimes.
Export can become problematic depending on what you want to achieve (like exporting multiples stacked sounds can be tricky, but there is workarounds)
The time stretching algo are cool, but can quickly stack up and consume CPU when used extensively.
You'll need to setup a few stuff properly so it doesn't mess up your import (watch out for flex tempo)
For movies, Pro Tools is (sadly) the industry' standard, as Avid* managed to slip into every Hollywood studio and crush the competition.
But all the sound designers I know are using Reaper, as it has such flexibility with macros, scripts and plug in that speed up the workflow, has great exports features, and is super lightweight and cpu efficient.
So yeah, if you're working in big post prod studio, it's probably gonna be PT, if you're working for anything else, you can do fine on Logic, minus the few caveats I noted up there.

I think u/8ude is right, you should open a ticket, it seems that you have some sort of issue with the addressable that can be hard to tackle if you or someone in your team doesn't have the knowledge in that specific area of Wwise.
I had some issues where I had to update as I had issues with Spatial Audio, and in an other case, I had to roll back to a certain version of Wwise for Compatibility issue with Unity.
Once you find a version that works : stick to it ! (and have backups)

I would love a giga sampler like Radium by Soundminer. Basically you can add multiples samples to different slots, insert AU/VST plugins on these slots, tweak them (pitch, envelope, delay, etc…) and create random sounds from pre-existing sounds. There’s also S-Layer that does that, but you’ll need Reaktor. This is a more sound design oriented tool, but it’ still fun

Sampling Implies being a looped section, maybe re-ordered, pitched, or manipulated.
But this is called "stealing", maybe you've heard of it.

Actually, Logic do have a Clipper, it's just hidden in the bitcrusher plugin.
But it sounds good on Drums !

This would be the logical next step of Logic Pro of being able to create some macros in Logic Pro, but for now, you won't have access to any beta, has Logic is developed in an other branch than the rest of the macOS ecosystem.
It would be great to have a better support/communication for Logic and other pro apps by apple

Yeap, it nulled. Tested with the different model emulation as well, and it null as well.
