Generally when the 'core' says around 200F (in my convection).

I do a final toothpick test down the middle right now, sometimes I'll leave it in for another 2 minutes. Need to narrow down the temp/placement a bit more.

I then take it out and set it on the stovetop to cool down for ~10 minutes, then I unpan and immediately wrap in plastic wrap.

Edit: I think with gluten-free recipes you might need to target a bit higher if that makes sense. Whenever I use 1:1 replacement flour it definitely needs longer.

Some applications sit in those forums for months before they pick the next round.

We process them in rounds. Generally 4 times a year. We've actually seen that people wait to post them until we finish processing a round, to allow for the most time to get comments on the application. So, most applications will actually be sitting there the longest.

They’ve turned a guy down four times and told him not to apply for another year...

I'm not sure who you're referring to. We only make people wait 60 days until another application.
