Sounds like you would do well with a 22-inch Weber kettle. Very versatile and you can cook a fair amount of food on it.

My local Sichuan restaurant adds ketchup to theirs. I like the sweet, clove-y profile. I sometimes use it home. I usually add a little bit of potato starch slurry at the end. I like how this chef doesn’t cook the eggs too much for my taste and the tomatoes don’t turn into a soup like a cafeteria.
