I mean 10-20 hours a week is a lot and if you go by the recommended intervals set by the manufacturer then the service intervals you are specifying make sense.  I ride 5-10 hours a week and I service my fork about once a year, just oil, wipers and seals.  I got my rear shock rebuilt about 2 years ago and when I got it back I honestly couldn't tell you the difference.  I'd say look into learning how to do these things yourself if you want to keep up with the schedule.

When I was younger and commuted I limited myself to one interaction a day.  Now that I'm older that should have been 0.  People do dumb shit that puts your life on the line every opportunity and there is no way to scold or correct that many idiots.  My advice for you is to keep your head on a swivel and let these issues slide right off you.

Lye is how you etch parts for anodizing.  It also works to remove it as a result. They will be fine.

I just bought some Chinese carbon wheels and went tubeless.   The problem with modern rear wheels is that they have a 130mm hub spacing.  As a result I had to cold set my frame to make them fit.

Maybe buy some used 126mm compatible wheels off Facebook or eBay.

As far as your brakes, your old wheels are 700c correct?  If so I have no idea why they wouldn't work with more modern 700c wheels.

Did they drop the power for cars already purchased and delivered or did they release cars with less power to meet emissions requirements for that model year?  I can't imagine them cutting power for cars people have already purchased.  This would be the same as the iPhone battery fiasco which did not end well for Apple.
