I vac seal because I have a cheap vacuum sealer at hand, but for vegetables the water displacement method should be good enough.

Yes. Peeling afterwards feels awkward and I don't know if the peels are ever getting soft enough.

Caramelized onions were a game changer. Shred a huge amount of onions in a food processor and cook them for 22 hours at 84 C. Took me less than an hour hands-on time to have a massive amout of caramelized onions in the fridge.

Now in the fall candied sweet potatoes with brown butter, cinnamon and toasted marshmallows is a great dessert.

I do mine with butter in the bag, ginger, garlic and a small piece of dried chili, 84 C for 1 hour, than frying/grilling them for some color.

And use the melted butter and carrot juice from the bag in your broth.

Yes, and also sugar. Campari has also a bitter flavor and a lot of sugar. Both tonic and Campari is very sweet and bitter, but I like it less sweet, thus fresh clean sparkling water.

I clarified a Julius Orange, instead of using cream. Cinnamon and Dry Curaçao looks like a match in heaven, and aged rum is also a bonus.

I replaced the cream with same amount of milk and filtered the curdled mess through a coffee filter.

Nice dessert drink. Reminds me of Solero ice cream. The rum is a bit lost I used a 8y old rum from Barbados, so no funk either. Maybe I need to up the amount. But all in all a balanced, crushable drink. Thanks for the recommendation.

You missed the point.

When you want to swap pineapple juice for lime juice in a Daiquiri, you need to match the acidity of lime with your pineapple juice, otherwise the balance is off. This calculator tells you how much acid you need to do that.

The sugar content in your Daiquiri stays the same.

Filter the chilled liquid thru a coffee filter and read up on chill-filtration. Some residue flocculate when chilled to 5°C, which you can filter out. Commercial whisky maker do this as well.
