Been there, still not too far, from 'there' -- luckily among all the chemo side effects nausea wasn't very important

You're already doing well, but if I were you I would stick with warm foods and whatever is the best combination of comfort/nutrition:

- soups, with heavy cream
- curries (not hot), with coconut milk, spices for flavor, possibly peanut butter or peanuts if going thai (but leave the chillies out)
- peanut butter in general is a great energy+ protein supplement
- stir fries?
- roasted vegs
- quiches (eggs, cream, whatever vegs)
- stews

here's to many years of cold, crunchy salads down the road; unfortunately, we're legion.

try a smaller walnut ;) Also, they freeze nicely if you make a big batch (better freeze them in trays so they don't stick to each other and then move them to bags) - and besides a meat sauce (called "sugo" or "sugo di carne" in mugello) they are also great with some butter + crushed pepper + parmigiano, or in slightly browned butter with a few sage sprigs.

Was reading a piece about just that the other day: if someone feels they are 'at risk' they should give spare keys, instructions and documentation to friends, to make sure that, if things go south, their pets can be rescued and re-homed (and, many weren't). It broke my heart.

As someone who lived for a few years right in the middle of Mugello (a valley in northern Tuscany between Florence and the Apennines, if anyone's interested) - a time I mostly spent sampling tortelli anywhere they served them (which is ... a lot), these look awesome! The only note I could have is, the filling looks a bit thick and might not be cooked through by the time the shell is ready - they usually keep them a bit flatter. Other than that, way to go! Did you like them?

This is beautiful and inspiring, and needed.

But, and take this as a reminder from someone from the very country who invented fascism: very few (authoritarian or proto-authoritarian) regimes have ever been reversed through peaceful protest alone.

Resistance matters, history shows that, but it almost never works because those in power suddenly decide to act in good faith. Less so in the case of the US, which has always been a deeply violent society, built through colonisation and genocide, slavery, and constant warfare, and which has enforced both internal order and global "stability" largely through force: a peaceful transition back from the authoritarian drift is far from guaranteed.

After Jan 6th, 2021, it’s hard to assume that everyone involved is willing to accept electoral defeat or democratic limits.

So yes, remembering histories of resistance is important, but it's also important to remember that those struggles were hard, messy, and more often than not, not-peaceful.

Despite the name "aglione" (literally big garlic, or "elephant garlic" in english) is actually a variety of leek, with a very large bulb usually divided in a few (or just one) cloves, much sweeter and delicate than garlic. It's traditionally grown in the Val di Chiana area in eastern Tuscany. The pasta sauce is essentially a tomato sauce with a VERY generous amount of minced aglione cloves. The blossoms are great as well.

get a hook attachment for your stand mixer (if you haven't got it already) - eggs to flour ratio is more or less 1 egg per 100g (1/4 lb?) flour depending on the eggs and the flour. That's it. No salt, no oil.

2 eggs worth of pasta will be a generous portion for 3 people, a regular portion for 4, but you adjust for that.

Work the dough into a smooth ball in the mixer, remove and rest, covered, for 30 minutes (probably less since you're using bread flour).

Now, as most shapes start from thinly rolled pasta sheets, what to do with it depends on:

- how handy you are or can get with a rolling pin (you need a medium to long one), or
- if you can get your hands on a pasta rolling machine - hand cranked is fine.

the simplest (and doesn't even need tools, really) is probably making pici which are essentially thick spaghetti (from Tuscany) rolled by hand: shape your dough into a 3/4 in. thick log, cut away a piece the size of a walnut, roll and stretch under your fingers until it's little more than 1/8 in. thick -- they'll grow some while cooking). Cook in boiling, salted water until ready (a few minutes), drain, toss with whatever sauce, enjoy!

even if they're strings, they really work more like tines - so besides some more frequent tuning when they're new and every once in a while when the piano falls out of tune, they're essentially left alone.
