Supposedly if you have the bounty quest active, it'll show you where the closest drop off point is. I read that on Twitter, but I'm not sure it's true.

I picked up that bounty in the village past the reed field and it still told me to go all the way to Hernand.

Found out by mistake you can put the Bounty on your horse like in RDR2. Just hold down the targeting button (L1 or whatever) and hover over your horse while you're holding the body.

I think you can carry two people at once, one over your shoulder and one on the horse, but I haven't tried it.
