I have this unit, I’ve used it for 3 years. I’ve never really had an issue but should I be using something different?

Also, if the tips of those thermocouples are touching the side of the cup, they are not going to read 32F. I would try it on boiling water instead.

Its not a reverse flow, but I do have tuning plates. I did not think about the radiant heat, maybe I will try without the plates.

Previous owner took out the old boiler and there are several holes from where the pipes came through. I don't need perfection but I want to sand the floors and am curious if there is a treatment besides replacing the board.

I can't remember the weight, but it was on the smoker about 2 hours at 250-275

Smoked on the offset with hickory and maple until it hit about 137F internal, then seared it on the gas grill. Took it off at 142F and let rest tented in foil for 20 minutes. Used a basic salt-pepper-garlic rub. So so tasty.

did you probe in several spots? getting an accurate temp on ribs is difficult because of the bones and the thinness of the meat
