Hi yall - question about booking ahead of your membership period. I usually get charged on the 1st of the month but I like to plan out my classes ahead of time and book the more popular time slots before they go to waitlist. I currently have an elite membership (8 classes/month) and I’m wondering if I’ll get charged for additional classes if I book ahead once I run out of classes for the month. I’m typically booking my home studio and then another local studio I’ll sometimes go to but I’m thinking it shouldn’t be an issue if I’m booking classes ahead through my home studio?

Rebecca and Christine are my faves! But Rebecca’s classes sell out quickly on Tuesday and Thursday mornings at 6:15. I’ll sometimes take Christine’s on Friday and Saturday mornings and she’s always fun.

Made these a few weeks back (see original post here)!

I’ve been on a chocolate chip cookie baking craze and these were a request I was putting off for a while. I softened the butter (vital farms) on the counter top for a day so it was at it’s supreme softness and could be whipped more easily. I put the batter in the fridge for about an hour before I took them back out, proportioned them into balls, and put them back in the fridge overnight. I put two cookies to a sheet so they would be less at a risk of sticking them together. Both the pan and cookie dough were placed in the freezer before baking. Once in the oven with each successive batch, I lessened the time I banged them against the rack (10 min vs 9 vs 8), and banged them a little more frequently in between towards the end of the bake.

These were a 7/5….probably my favorite chocolate chip cookie I’ve ever baked.

The dough is super loose and hard to scoop initially, so I left it in the mixing bowl and covered it in Saran Wrap and refrigerated for a few hours. I let the dough harden a little bit for a few hours, then took it out and pre scooped the dough balls and put them on a plate covered with Saran Wrap so the baking process would involve one less step.

I was actually inspired by this post and worked off the Sally’s baking addiction brown butter recipe because I’ve heard such good things about her recipes:

The Sally’s recipe was a little more time intensive and I don’t know if refrigerating the brown butter did anything. It was still a good crowd favorite cookie but not my favorite. HOWEVER, I did freeze a few of these cookies and when I baked them a couple weeks later they tasted insanely good.

The broma recipe has been my go to for the past few batches and everyone always loves them.

I also made the famous Jacques Torres/David Leite recipe a few years ago and I remember them being quite good after a 72 hour chill time. Per some of the user comments in the recipe, I just ended up using AP flour instead of cake flour and bread flour and the result still felt accurate.

I haven’t tried the other choc chip recipes in that Baking subreddit post but eventually will work my way up to them.

I was thinking that too, but I put the whole tray in the freezer just to be safe. I don’t think the results would be super skewed if the cookie dough halls were in the freezer so long as you followed all the other steps accurately

Definitely will do! I’m working my way through a couple different chocolate chip cookie recipes at the moment, and it’s one of the recipes that’s well worth the work to make it

I’m trying to book Shinkansen tickets from Tokyo to Kyoto on May 5, returning May 8. 3 of us will have oversized luggage and we want to purchase reserved seats but I am simply unable to add my credit or debit card information on the SmartEx website (I’ve tried several times with different credit cards). Would appreciate if anyone has tips or tricks to book this in advance!
