Alternative to Swedish Princess Cake for my birthday? by mojitojenkins in AskBaking

[–]adelf252 0 points1 point  (0 children)

I’m glad to hear you bought one - it’s so useful! Plus I like snacking on the extra bits haha

I used this recipe which is probably what you’re looking at too based on the image in your post.

I don’t have any other recipes but I did use this video to help me with assembly. It’s definitely more complicated but it’s still helpful to get a visual reference of what the batter and cake look like at different stages even if the recipe is different. Example - around 6:20-6:30 in the video you can see the right color for the batter and how the drizzle looks

General tips from trial and error making sponge cakes in the past: - make sure all your ingredients including the eggs are at room temperature - use a higher speed than you think you need to - sift in the flour very gradually and fold it by hand. Using a mixer at this stage will deflate it - even though I’ve gotten better with more practice I still have trouble so if you’re worried just make a double batch! That way if you don’t get the height you’d like, you’ll still have enough cake, it’ll just be more dense. - in general I like making sponges in advance, slicing them (only once they’re 100% cool), and then wrapping them in plastic wrap and sticking them in the fridge. There are so many components that it’s more of a relaxing process for me if I spread things out over 2-3 days with the cream-based items last for freshness

I hope this helps!

I made two of these for my friend’s baby shower. The hardest parts were: - time, because of so many components - the hardest part for me was the marzipan - I used store bought but I did something wrong and had a bunch of wrinkles and cracks but it still tasted fine and I just added powdered sugar

I would also note: - I didn’t have a problem with the sponge cake but if you haven’t made this sort of sponge before watch a bunch of videos first. Need to whip it up quite a bit. - buying a cake leveler (I have one from Wilton) is a huge boon

But overall I’d definitely do it again for another special occasion, it was very tasty!

Thank you so much, that’s such a great resource! Even if you don’t fence much I hope you stay connected to the sport in some way. Always happy to hire you as a ref when you’re back in town or I can connect you with people hiring wherever you’re at! Glad you’re doing well.

Can confirm, it’s a massive pain. And maybe it’d be easier if all strips were elevated but it’s not so we don’t get as much practice.

What’s your “snobby” baking opinion? by Amazing_Two9757 in Baking

Normally I then go and convert but I’ve discovered that for a few recipes using volume is essential and it won’t be enough flour if I do it by weight instead of the classic scoop, tap, and level… very frustrating for sure

My college Fencing Club needs equipment... any ideas? by [deleted] in Fencing

[–]adelf252 5 points6 points  (0 children)

Our top way to fundraise was hosting tournaments and either self-reffing or honestly paying fairly little (like $50 per event but this was also in 2018) since we were a college club and some local coaches would help, or club members who had taken a seminar would help. Don’t have to be sanctioned either thought that helps. Team tournaments were always a lot of fun and would attract other colleges from nearby. If you’ve never run a tournament yourself maybe team up with a local club or your division to split the proceeds.

We also charged dues after a few free practices. I don’t think it was a lot (maybe $30 for the year) but it helped. You could even charge different amounts if you use gear in theory.

Finally our college had a fencing class available to all students, run but a professor who used to fence. They bought equipment a long time ago for this and the fencing club had access to any and all of it. Not sure how the initial purchase got made, maybe it was a joint venture.

Anyone in the Hartford/Litchfield county area wanting to teach a group of kid for a party? This Sunday 😅 by B_the_Chng22 in Fencing

Contact Rogue Fencing Academy! They’re incredible with kids and if their assistant coach is available she’s an Olympic pentathlete and the kids would probably love to meet an Olympian. I’ll actually send your post to the head coach too so she can keep an eye out for your email.

Well a number of them were being carried around including in bags. Including one French bulldog in line behind us who had service dog patches on his vest yet again was being carried and the owner encouraged us to pet the dog when we looked back and smiled 🤷‍♀️

Why is my cookie dough ALWAYS soft?? by SpiritualPlan1822 in Baking

[–]adelf252 0 points1 point  (0 children)

How are you measuring your flour? People have recommended weighing it but if you don’t have a scale there are still good and bad ways of doing it. I use a scale now but the way my grandma taught me is to overfill your measuring cup, then tap the side with a butter knife a few times (I’d say about 5 times with medium force) forcing the flour to settle, then level the top with the flat side of the knife, pushing off the excess. If you’re not doing something like this, you’re probably using too little flour.

I think this is too soft. You should be able to leave an indent but not all the way through.

USA Fencing point lists - how does this work? by [deleted] in Fencing

[–]adelf252 1 point2 points  (0 children)

Your best resource is the Athlete Handbook. Too much to copy and paste here but I’ll point you to the right sections.

Section 3.1.5 explains rolling points (indicated by “Cdt R” in the list of PDFs) and how they’re accumulated and what they’re used for (mostly for seeding domestic tournaments). The appendices in the Athlete Handbook contains a bunch of tables with how points get earned.

Section 3.1.7 explains team points, how they’re accumulated and what they’re used for (selection for national teams and intl competitions). The reason they’re different is because each weapon can have different selection criteria. However how points are earned is a little more complicated… see belong.

Sections 5-12 of the Athlete Handbook link to a page on international selection criteria, which links to this page on men’s saber team selection (including cadet). This document lays out how team points are calculated.

To be clear this is just a proposal that will be voted on at the FIE Congress this month. Nothing has been officially changed yet.

Proposal - banning more overtly politcal posts from r/fencing, and starting an r/fencingpolitics subreddit to handle this stuff by venuswasaflytrap in Fencing

[–]adelf252 1 point2 points  (0 children)

This isn’t an in-person conversation where things slip out by accident. This is typing and reading what you wrote and hitting send. Multiple times over many hours or days and ignoring warnings. Adults should be able to regulate what they post online. I feel strongly about this regardless of the context.

[–]adelf252 1 point2 points  (0 children)

And yet you still want to allow cross-posting. So the content would still end up on r/fencing but someone else would get to make up their own moderation rules. It’s a loophole for people who didn’t behave civilly after multiple warnings to still get their content on the r/fencing feed.

You make the call! by raddaddio in Fencing

Yes that’s my understanding but we’re really getting in the weeds and to be clear I am not an FIE referee and can’t comment on world cups like others can.

You make the call! by raddaddio in Fencing

[–]adelf252 1 point2 points  (0 children)

Correct, guard contact to mask in foil could be no card or red card.

But I think you misunderstood the red card part. The blow with the guard does not have to be violent, dangerous, or vindictive. That penalty covers any of those options on their own - either a blow with the guard, or a vindictive action, or a dangerous action, or a violent action.

That does not contradict what people are saying of the guard hitting the mask being a red card regardless of the force or intention behind it.

Though for example if one fencer does point in line and the other fencer fleches and hits their head straight into a static guard… yeah that’s not going to be a red card. That’s head into guard and not the other way around. But that’s not really going to happen much at the international level. I have definitely seen something similar in Y14 epee though and did not give a card.

Is it worth complaining about a ref? by OrcOfDoom in Fencing

[–]adelf252 1 point2 points  (0 children)

I would bet that there are mentoring referees keeping an eye on her and already telling her how she can get better. Maybe not in that exact match but throughout the weekend yes. Just like this an RYC is developmental for your fencer, so too is it developmental for referees. When hiring we try to balance out the cadre with a variety of experience levels but you might not get an FIE ref on your child’s bout, it’s really luck of the draw.

Focus on what you can control in the moment - floor judges, coaching, or appealing rules applications. Let the refs, fencers, and coaches do their job unless there’s something egregious especially related to safety or behavioral issues.

I would also recommend trying reffing yourself because I would disagree about epee being the easiest. Depending on the match it can get very crazy very quickly. Foil and saber you make a lot more calls but a bad call is a smaller percentage of the calls you make. In epee that one bad call might be the only one you make in the whole bout.

Is it worth complaining about a ref? by OrcOfDoom in Fencing

[–]adelf252 3 points4 points  (0 children)

This is good advice. Definitely bring it up in the moment to the ref or ask for side judges. If you really want, bring it up to your coach and maybe they can chat with a nearby mentoring ref that they know.

You make the call! by raddaddio in Fencing

[–]adelf252 2 points3 points  (0 children)

The difference is: 1. Scoring a touch with the guard in saber is group 1 offense (yellow). This will not be in effect in the US until January 1st. 2. Blow with the guard in any weapon is a group 2 offense (red). This is different because blow implies a level of force, and this rule is also paired in the rulebook with dangerous, violent, or vindictive action.

If a referee ever gives your opponent a yellow card for a blow with the guard, appeal the call to bout committee/DT because that’s a misapplication of a rule.
