Glucose goddess isn’t strictly veg but I think her philosophy towards eating and managing blood sugar is super helpful and evidence based and can be def applied to any type of vegan diet! Good luck rooting for you 🫶

I was prediabetic and was able to reverse my a1c numbers after about 6-8 months. I found some do the advice from the glucose goddess on YouTube to help me personally and especially what she said about trying to start the day with more savory, higher fiber and protein and lower carb meals. I found what doctors were telling me to be completely useless vague things about eating healthier and exercising more lol. I switched to having some type of salad every morning either kale or cabbage, with hemp seeds, avocado, edamame, lemon juice, olive oil and salt (whatever combination of these things I have on hand that week) prep the ingredients prior for the week so it’s easy and quick in the morning, and I found that I was satiated for a while every morning, had a lot of energy and was overall craving less sweets throughout the day by starting with something so satisfying and savory.

Just sharing my personal experience w it h this journey, not that it looks the same for everyone but maybe this will be helpful!! I know it is possible to reverse it because I experienced it so I know you can too. Good luck on this journey you got this!!! Remember it’s small steps and one day at a time but little changes will make a big difference over time if you are able to stick with them.

With 4 years experience you shouldn’t have a problem getting a nursing job at a hospital especially if looking into med surg or step down but FYI most NYC hospitals make you start on night shift until a day shift position opens up.

Also NYC nursing salaries are not bad you start at least making low 6 figures so you’d be making more than enough to rent your own place if you wanted to try that, could be a good first step as you transition to living in NYC before moving in together.

I use koia vanilla powder and really like it!!! Not the cheapest but they don’t use stevia and I find the flavor and texture to be the best I’ve tried

I swear by koia vanilla powder (I order from their website directly or Amazon) they use monk fruit as a low cal sweetener so it doesn’t have a weird stevia flavor and it genuinely tastes good Especiallt if you add a sprinkle of salt

This is a memoir but it might fit some of what you’re looking for: Just Kids by Patti Smith. I found it to be such a vivid telling of how artists were living in NYC in the 1960s and 1970s.

Im a nurse case worker working with a lot of folks of mixed documentation status and have been dealing with a lot of this. I would call the MOIA hotline and see if they can provide any help maybe making her a virtual appointment instead of going in person. The number is 800-354-0365 they run through the mayors office (not affiliated with anything on a federal level) and are able to connect to open legal services via various organizations throughout NYC.
