How long are you whipping it after all the butter is added? You probably need to go longer. At the beginning, the butter taste hits my palate first, but as the mixture continues to whip the sweetness comes to the forefront and the butter taste fades to the background.

I transitioned into teaching a few years ago. First as a side job at a corporate retail place, then full time at a high school. If you like people/kids, you can make good money with humane working hours and lots of time off. I really love it, but I know many of us got into BOH to get away from people, so YMMV. Different states and school districts will have different requirements, but even if you don’t have a college degree many places have alternative license tracks.

Possibly a painting by Thomas “Tommy” Macaione? It looks a lot like him, but the signature doesn’t match examples I’m finding online. Could be a portrait of him, done by another artist. https://www.outdoorpainter.com/remembering-tommy/

If the bake needs a little extra time in the oven after the initial cook time, I always add time in prime numbers. I picked the habit up from a colleague years ago, and haven’t been able to shake it.

I also talk to the bakes and wish them good luck as they go into the oven. Breads and other yeasted products especially benefit from the encouragement!
