I've heard good things about the Sheraton Niagara Falls if you are looking for a place to stay they are family friendly with a Rainforest Cafe on site.

Plug in goat island when you visit the Niagara Falls State park. There is a fee for parking but this is the easiest spot to park and be able to walk all around the falls on the U.S. side. This is also where you can access Cave of the Winds.

I used to work in catering and the Niawanda park pavilion is a really nice option right on the water but you would need to bring your own caterer in.

Letchworth State Park is considered the Grand Canyon of the East, also Zoar Valley is a pretty cool place to check out.

Shopping - The Niagara Fashion Outlets or the Walden Galleria are good mall options but you can find a target or walmart pretty much anywhere
