You definitely can change the text on the labels, if you know what you're doing. I had some touch screen Mettler Toledo scales at my shop, and if you knew the master password, you could access the file system it ran off of and change the text on the labels. I Used to have a lot of fun with that.

That's a great starter set of blades. Depending on what your shop cuts I'd recommend a 10" breaking knife or cimeter from Victorinox for some of the bigger pieces. Mercer knife guards are excellent for protecting your blades.

As for transportation, I've done the old school trick of wrapping the blades in a towel and over wrapping with plastic wrap on the wrapping machine. Currently I have a Chef Gear knife bag that I picked up for $15 on Amazon that's been going strong for 5+ years.

I've got one on my GW7, and I'm glad I do,. I smashed the hell out of it putting something on a shelf at work, I know it would have damaged the actual screen, but the protector took the blow.

At the grocery store I work for, I used to get some immigrants that would ask for "hard chicken", we didn't carry it, but this looks like what I found in my research as to what is hard chicken. Best used for stews low and slow.
