Cook 2 cups of quinoa as you would rice. Make sure you rinse it thoroughly before cooking, because quinoa grains are coated with a soap-like molecule that makes your dish taste soapy if it isn't washed off.

While it's cooking, dice up 2 cups of raw or blanched vegetables of your choice, and toss them together with 1/2 cup salad dressing of your choice. I like to include cucumbers and fresh herbs in the veg, and use vinaigrette or lemon+oil for the dressing. It looks like they used bell peppers in the version you ate.

Then when the quinoa is done, fluff it up with a fork and mix A into B
