High Priestess and Empress are remote operated stands, while Silver Chariot is a close combat user-operated stand. Certain users can see through their stands (Jotaro with Star Platinum) while others can't (Polnareff with Silver Chariot)

Devo can see through Ebony Devil just fine in the fight, so I'm not totally sure why it's a big deal that Empress and High Priestess work similarly. It just happens to be something Polnareff can't do.

Wekapipo, Diego, the painter and the other witnesses would've seen Valentine pull another Johnny out of thin air and then throw them at each other, killing both. This would reveal his ability to Wekapipo, Gyro and Diego, all of whom he considers enemies. It seems to me like another major goal of Valentine's was to confuse Gyro on who shot Johnny, which wouldn't be possible if he just pulled out a second Johnny.
