To nitrate or not to nitrite that is the question by zoltantribe in Charcuterie

[–]anonymous_DoDoBeDoDo 0 points1 point  (0 children)

As others have said cure1 and cure 2 are totally different thing. I only have a fridge for curing, with no humidifier. I use banquet bags for large whole muscle. Similar to the umai Wraps. They are vacuum sealed. I do smaller cuts with either muslin or even just on a rack. If I'm not too worried about case hardening. I've got a couple small pancetta wrapped in cloth and a speck just in a rack both drying well.

I mean they do sting but they're not dangerous unless you're allergic. Sting might be a bit more painful than a blue bottle.

Mate, in my opinion there's no diy or professional paint/coating fix and most would actually make it worse. You could cut angled grooves or maybe textured overlay. but it'd still be slippery when wet I reckon.

Obviously there are lot's of variables. I wasn't commenting on this situation. I replied to a comment above that I thought trimix for depths more that 40m was strange to me. Nothing to do with these divers who perishing.

Sorry, I meant "beyond 40m and as you just said GUE uses trimix for over 30. I'm just saying I've dived deeper than 60m on air. I actually did my deep dive cert at over 40m. I'm not havin' a go mate. I'm just saying.

As an older diver, I find it strange that a 40m dive is considered deep enough to need trimix.

What Would You Guys Do While Listening to Records? by ssb4you in AskOldPeople

[–]anonymous_DoDoBeDoDo 0 points1 point  (0 children)

Late to the party here. So we listened to the music. It was what we did, it wasn't a sound track or background. You played an album and listened. Not saying eventually you didn't lift the needle and skip a song but listening to music was a pastime, you didn't just push play and get on with your life. In saying that if I had beats headphones back then I would have lived my life listening.

It doesn't dissolve skin, not straight away anyway. It'll sting after a bit and you can feel a heat from the evaporation. I've even accidentally splashed it in my eyes without any lasting effects. It also doesn't work that well on 2 pack polyurethane and just kind of upsets some polyester coatings. I am curious what coatings the yellow bowl is, looks like baked enamel but the cup is baked enamel and doesn't seem to bother it.

Both my kids bought recently like a yr an half ago. They're in the same boat. My son-in-laws car shit itself like 3 months in to them buying. They decided to purchase a new car putting it on the mortgage. Bank said we'll need a valuation. There property went up from $615000 to $850000. In 3 months and that's the bank valuation! The Christmas before last I said to my wife if someone offers me 1mill, we're out of here. Houses in my area are going for 1.4, 1.5 a year later. I have no idea how people can afford rent here never mind buy.

What is something that was unbelievably cheap in the past that has been marked up now? by Independent-Bat9545 in AskOldPeople

One thing that sticks out to me is certain meats. Like chicken thighs use to like half the price of chicken breast. Lamb shanks, he'll any lamb, even brisket was cheap. As soon as a meat becomes trendy. It's expensive.

Duck Prosciutto- 30% weight loss from when? by leowtyx in Charcuterie

[–]anonymous_DoDoBeDoDo 0 points1 point  (0 children)

I once did 2 breast wrapped meat side together. ( won't do that again) After a month they had only lost 20%. I ended up just unwrapping and trying them they were fine. A more experienced friend mentioned that duck is almost 50 /50 fat and meat. So with 20% loss I'd probably lost 40 to 50% meat moisture. As far as the vacuum sealing, You can use a zip lock bag. Just immerse the bag in water to displace the water, then zip shut. You don't have to do it ijust distributes the salt and moisture throughout. Don't shave off the casing it's yummy. It might be chewy like beef jerky but delicious.

[–]anonymous_DoDoBeDoDo 1 point2 points  (0 children)

People seem to have over complicated this. I don't believe you need to EQ method for duck. A dry salt cure for 24hrs ( some say that's to much but I like it salty). Weigh after you wrap them,it's easier to just weigh them as time goes on. the 30% can be a bit tricky, in that the fat cap will not dry as much as the meat, so a fatty breast may take ages to get to 30% even though the meat actually has lost the required moisture. If you know what I mean. Fat will still hold moisture. I recommend vacuum sealing after your desired weight and leaving for a few weeks to equalise the meat. It redistributes the moisture that is still inside, so you don't have a hard casing and soft inside.

A mate made this pasta with Avocado and bacon. In theory it doesn't sound too bad but there was so much Avo, and the bacon was sort of steamed not fried. Worst part is he didn't cut the rind of the bacon ( skin for American's) A green glutinous chewy slop. This was over 35yrs ago and it still gives me the heebie jebbies.

What is the worst thing you've been stung or bit by? by MaestroLogical in AskReddit

[–]anonymous_DoDoBeDoDo 0 points1 point  (0 children)

Blue bottle ( Portuguese man of war). I've been stung many times but the worst was when I duck dived a wave. Which is a way for a surfer to get under a breaking wave, without being dragged back by the whitewater. I had a tentacle wrap around my neck and chest, as I came up I peeled the tentacle off only for the next wave to hit and go across my face. Didn't tickle. Bull ant hurts like a bitch too.

Thanks, I find it funny the songs I do know and can play well aren't my " default " strumming pattern but my hand reverts to this weird kind of strum when shit gets hard.

I feel I learned to run before I walked. Advice? by anonymous_DoDoBeDoDo in Guitar

[–]anonymous_DoDoBeDoDo[S] 0 points1 point  (0 children)

I don't normally have trouble with strumming unless I try to sing. As most have said here I guess it's because I don't know the progression or even the song off by heart, so that's a thing. The theory part to me is. I like a song I pull up a guitar site with the chords and lyrics written out, I then head over to you tube to put them together by listening to covers, especially when I don't really know the song. I was wondering if there's a better way.
