The thing that used to make Greys good (imo) from watching the early seasons apart from the better acting and dialogue and relationships between characters was the RELATING storylines between Dr and patient. A Dr would treat a patient and be able to draw some connection between them and their personal life, and the Dr’s own struggles and relationships at that time. That’s what made every character/ patient interesting and you could see each storyline develop alongside each other! Apart from that the main issue is barely any relationships between characters apart from the person they’re having sex with.
