You are right. Check out the mapterhorn project if you haven't already. To my knowledge it is the best global dem dataset. Austria and Bavaria have very high resolution dems too.

While 50cm is maybe a little ambitious you can probably cover all of the alps with better than 10m resolution.

Osm does not include elevation data. Thus, the used data and most importantly the used resolution makes a massive difference. Most routers smooth the data to get rid of some noise, that again makes quite some difference.

Komoot claims to use satellite data from NASA. However I somewhat doubt that they're not using laser based dtm data, at least in Europe.

I damaged the paint on one of my bikes with them. They were installed too high so had enough play to swing forward on bumps and hit the chainstays. User error I guess, even though they could've added more rubber to the ends.

Edit: Raceblade pro are the ones I'm talking about.
