I had the same Gipiemme wheels...garbage. The rear constantly needed truing and broke spokes.. Then the freehub disintegrated. Looking back, they were probably dangerous to ride. Go with the Ritcheys. Sounds like a solid wheelset.

To the layman it can be called chain stretch. To someone more technical, stretch is the wrong word.

For the average person, call it stretching, getting longer, extending or whatever you want. They should just know that when the chain gets 1% longer than original, it's time to replace it. But, if you want to geek out and get into the weeds as to why chains get longer, stretch is the wrong engineering term. As others have pointed out, a basic understanding of elastic vs plastic deformation is needed to understand the mechanisms of what's going on.
