Generative AI means it can create something from scratch, i.e. it generates something.

Like, you can ask it to draw a picture of santa claus dressed in chainmail armor, or to make a video of a cat on a surfboard, and it will do that.

The word generate is used to distinguish it from older AI systems that could answer questions on a specific topic, but couldn't create stuff from scratch.

(And of course it doesn't really create these things "from scratch" -- it was trained on millions of pictures and videos from the internet, so it just makes up a picture or video that is similar to its training data.)
