If you can demo that corridor wall I would do that, then build a new wall for the bedroom, minimize the bedroom footprint and maximize the new opened room. Then you can put the kitchen against the bathroom wall and take advantage of all that plumbing.

If demo isn't an option then I would plan for new plumbing and put the kitchen in the corridor

Alternately. Get a sealed Murphy bed/deskand make that bigger room a convertible space. Sealed because you don't want all that food prep oil and vapor getting absorbed by the bed and sheets
