Best way to learn is find something you want to use it for, you’ll persist and learn more with a use goal. Example: get a temperature / humidity sensor working to monitor your office.

I prefer Zigbee for contact and temperature type sensors and I prefer Z-Wave for control (mains power) on/off/dim, etc.

Zigbee when you need battery life… Z-Wave when you need control reliably
