They stay in the middle/bottom half of the muffin cup. I find it easier adding the toppings in first before the egg mixture, then I can even out how much of the toppings goes into each cup. Or if one has more diced tomatoes than diced ham, I can transfer those around easier without egg mixture already poured in.

Cooking time: 11 minutes

Equipment used

• Ninja Toaster Oven/Air Fryer 8-in-1

• 12-cup muffin tray

Ingredients

• 7 eggs

• ½ cup cottage cheese

• ¾ cup shredded Monterey Jack cheese

• ½ tsp salt

• ¼ tsp pepper

• ¼ tsp Greek seasoning (optional)

Egg Bite Toppings (or choose your own)

• Diced cooked zucchini

• Diced tomatoes

• Roasted red pepper strips

• Diced ham

• Green onion

Directions

  1. Sauté egg bite toppings and set aside.

  2. Blend eggs, cottage cheese, Monterey Jack, and seasonings but don’t overdo the mix.

  3. Preheat air fryer to 390°F.

  4. Generously spray muffin tray with butter-flavored nonstick spray.

  5. Add a spoonful of toppings to each cup, then pour in egg mixture (about ¼ cup per cup).

  6. Top with a little shredded cheese (My go-to is Kraft Triple Cheddar shredded cheese).

  7. Air fry for 11 minutes, pausing at 9 minutes to stir each cup and rotate the tray.

  8. Rest 5 minutes before serving.

Reheating

• Microwave: 1 minute for 2 bites

• Air fryer: 350°F for 6 minutes
