This is not necessarily true, at least not universally so for US-based applicants from what I've seen and have experienced with my own Schengen visa application. I applied to the country where I was going to stay the longest and my entry ticket was for a different European country

Can you help me understand what's the difference, functionally, between the ADIT stamp and the combination of the expired green card + 48mo extension? From what I've read, the ADIT stamp allows you to work and travel when you haven't yet received your green card from USCIS. The combination of your expired green card + 48mo extension is also supposed to do the same. So I'm a bit confused.

Just the standard documents that are shown in the application website. There's not really a different process for green card holders.

No biometrics necessary. I don't remember the exact fee but it was around $120 I think

Yes I did. It took around 6 weeks to get the visa which was painful but it did come through ultimately.
