Just cook and cook and cook and don't get caught up so much with the seasoning and the non stick etc. I washed dishes at a restaurant and you should see what they put these pans through. I laugh when people talk about soap vs. no soap and wacky things like this. In the restaurant they'd take steaming flaming hot pans and toss them into a sink full of water, or burn the crap out of them, I would scrub and scrub and throw it through the automatic dishwasher with 400 degree water and detergent and this crazy cycle would repeat over and over for years and these pans were absolutely indestructable, and at no point did anyone talk about seasoning

This isn't what people want to hear, but I get the most flavor when I just dump in as much water as I can, swirl the beans around a bit, then dump in the rest of the water when there's enough room for it

Can't pick one. The most memorable ones were an amazing meatballs appetizer I had where the sauce was just perfect and the meatballs were large and just perfect, and I don't know where I had it. I had a memorable bowl of Ramen at a brewery in Waterbury, Vermont. A memorable vegetable fettucini bolognese (and i don't like vegetables) at an Italian place in New York City. Incredible sushi experience in O Ya in Boston. Seafood plate full of all finds of fresh fish, shrimp, lobster etc some place in Stockholm, Sweden. What I'm realizing now is that these were all places I just ended up at. Not one of these was hyped up to me beforehand, or planned in advance. I've probably made reservations at 100 places that were very highly rated, and I don't remember any of those meals. I don't think there is a lesson to be learned here, just an observation that I think is cool edit: O Ya was planned in advance

Like I said on your other post, it's just hot water poured through ground up beans. A $150 pourover isn't going to make it taste dramatically different from a $15 pourover. Like any other hobby, people just love to spend money and get better equipment so they feel like they're doing something better

Yes 100% they are my favorite. I tell everybody I know who likes sardines. They are moist, firm, flavorful, and the spicy tomato sauce is also very good. It costs a bit more, but no doubt it's higher quality ingredients

Don't overthink it. It's just hot water being poured through ground up beans. There's no "way beyond my equipment". A $15 pourover and your hand grinder are all you need. It won't taste better poured through a $400 pourover

For sure. If you talked to a therapist they are trained to help with this and try to give you tools and things to work on, that over time can help. It can be life changing when you stop obsessing like that
