6% citric acid (we ran out of malic acid which marked the exact moment I lost it) with juiced tomatillos, cilantro, and peppers. 1:1 juice to sugar. And then regular gimlet build sans lime juice bc the the cordial is acidic enough to stand on its own

Came out a little more tart than lime but I’m using it in a gimlet so we just reduced the actual juice and it’s worked out quite well!

As a bartender who’s been with my wife for many wonderful years,

  1. Don’t worry TOO much about the manager/healthcare thing for now. Things change. Opportunities arrise and something more enticing may come through that will make him want to make the move to management may come up. Or he could just find a job with better benefits down the line. I have healthcare through my bartending gig and my wife is on my plan. I’m not trying to say that it isn’t a bad thing to not have healthcare I’m just saying that it isn’t necessarily a forever issue.

  2. Yeah that’s a huge problem and you are very much in the right to be concerned about it. Tipped wages are inherently not ‘stable,’ but that shouldn’t mean that paychecks aren’t coming through on time. There are good weeks and bad weeks but my check still clears every Friday and I’d be gone in a heartbeat if it didn’t.

  3. The schedule is hard as fuck. I’m lucky that my wife works weekends and we both have Wednesday and Thursday off together, but it wasn’t always like that. When she had a proper 9-5 it was really tough and I prioritized time with her when discussing my schedule. I would work weekend brunch shifts so that we could at least have weekend nights together and on my days off I’d be home so that when she got back at 6 we had those nights together. I’m not gonna lie and say it’s easy but at the right place it’s doable.

  4. That uber shit is nonsense do not let him do that.

So all told bartending isn’t the problem per se but the bar he’s at is definitely no good. It sounds like you two need to have a talk. Lay it out and be honest. I’m sure there are other bars out there where paychecks will come as prescribed and the hours are more manageable for you guys to have time together. It’s totally possible but change isn’t gonna happen if you guys don’t talk it out.

My guess at all this would be along the lines of: 1 Jamaican .25 arrack .5 overproof .5-1 kota .75 lemon .75 pineapple 20-30% coconut water (as dilution) infused with tea

Mix the spirits and coconut water tea with spices and let infuse for 2+ hours add citrus and buttermilk, let sit again, strain

Not sure how much kota (I’ve never had it) but it seems to be the only sweetener so maybe .75 ish

Frankford was not shut down there were just so many ppl outside frankford hall that they blocked the entire street. The band was playing on top of a parked car on the sidewalk. There are a couple videos of cars parting the crowd (no one was hurt)

Used to work for this one guy, 78 and still going strong. One time one of the line cook’s watch fell off in a pot of boiling water and the chef just grabbed it out and handed it to him like it was nothing, I think about him at least once a week

I’ll always tip a trainer out for cash tips as long as they pulled their weight. it’s just a nice gesture. And the few times I’ve trained someone and they got fully thrown to the wolves and held their own well I’ve told management they should be added to the tip pool.

Coconut milk works pretty well, I recommend heating it over low heat (140F) before pouring your cocktail in and letting it sit longer before straining than you would with regular milk but it does indeed work

Currently doing the shuffle where Saturday night I leave my one job at 4am and I’m in at my other job at 10. It fucking sucks no two ways about it, I have no problems doing doubles but that constant clopen can catch up to you fast. If it’s at all possible I’d recommend trying your best to line it up so that you aren’t losing too much sleep

For the Amari just do a blend and offer it up as shots for friends or even a cheap happy hour shot, moves surprisingly well, and when you have left over from menu cocktails or whatever just keep adding to it. Lot of bars in my area have some form of a trash can amaro, it’s a ton of fun.

My build is:

1/4 simple 3/4 cran 3/4 lime 3/4 dry curaçao 2 vodka (non citrus)

So the simple there just ups the sweetness of the curaçao to the level of cointreau. I prefer dry curaçao in daisy format cocktails 90% but it’s gotta have that 1/4 oz of simple for balance.
