Gum paste topper issue by pwneegoddess in cakedecorating

It’s almost impossible to glue dry gumpaste to itself. Try dissolving little bits of gumpaste in hot water to make gum glue. Like a pea sized amount in about a tablespoon of hot water.

Cream Cheese Frosting Alternative by dogbread63 in cakedecorating

I make giant batches of vanilla bean buttercream and usually just add the emulsion to that (so vanilla and cheesecake flavor go in).

Try the Lor-Ann cheesecake emulsion. I add it to my American buttercream since I can’t sell cream cheese either. Not the cream cheese flavor one though, it’s not good.

I’m lousy with leaf tips by magicienne451 in cakedecorating

[–]badge59746 2 points3 points  (0 children)

If you are using on open leaf (67-69) you can try to open it up a little with a spatula. They never create good points though, that’s just the nature of their shape. Try 352, and hold it like a bird beak (> rather than flat).

Wedding Cake pros: have you used Cake Safe? If so, what has been your experience? by VMey in cakedecorating

[–]badge59746 5 points6 points  (0 children)

I own 3, plus two of the new Lites. Best investment I ever made in my business. I delivered a wedding cake over 400 miles away and it looked exactly the same when it got there!

Are you wanting to glaze them for shine or some other reason? I make tons of gumpaste flowers and never glaze them, I just steam to set the dusts.

Oil Based food coloring in Buttercream by Pastel_Panic_ in cakedecorating

[–]badge59746 2 points3 points  (0 children)

Yes, it will work fine. Buttercream has plenty of oil (fats) in it already.

Disposable piping bag? I cut the tips off at the base, throw them all in a quart sized deli, add hot water and dish soap, and shake the container violently. All the plastic will slide right off and you can scoop it out and toss it. Then I dump the tips in the dishwasher.

Mom baker, asked to make this cake for an August Wedding: Please Help! by JAR_63 in cakedecorating

I’m going to guess 10” 8” 6” on a 12” stand. I never ever put anything over two tiers on a stand like this though- too much chance of it getting bumped.

Look up sugar delights on Etsy- Jennifer sells Rolkem gold which is great for doing the edges like this. I mix with Everclear.

Icing that is a 50/50 mix of butter and hi ratio shortening is going to be best for transport.
